Until October of 2008 all of the meals that were served in our facility were catered by an outside source.  We were very fortunate from the begining, all the way to completion of the project.  Almost all of the equipment used in the cafeteria, from construction of the structure all the way down to the microwave were donated to us by an outside party.
       Mr. Kenneth was the project manager for the cafeteria and he spent countless hours overseeing the work as well as doing a large portion of it himself.  Most of the labor on the cafeteria was done by the inmates which saved the county thousands of dollars.  We have some very talented inmates here who were ready to lend a hand at every stage of the process.  They assisted in the construction, roofing, painting, building the cabinets, installing equipment, and even supplying the building with power and water.
       By us cooking our own meals, there will be much more of a variety of food available to serve.  Before October we were serving 2 meals per day at $4.25 per meal.  At our daily average capacity of 40 inmates that equals out to $135,050 annually.  If we served 3 meals per day, the annual cost would be $186,150.  To begin with, we were serving 2 meals per day at an average cost of $1.25 per meal, that equals $36,500 annually at our average capacity of 40 inmates, with a savings of $98,550 at the 2 meal per day cost.  We will be able to serve 3 meals per day and still save $80,300 annually on the 2 meal catering rate.
       Eventually the inmates will perform all of the cooking for the jail but at this time we have acquired the temporary assistance of Leslie Pearce to cook until everything is situated.
